What's so hard about clicking Tools -> Mail Settings -> Composer again? They found it the first time, they can find it again. And if it's a dangerous option, you don't hide the damn thing, you *warn* people when they select it the first time around. If you're *really* worried about these sorts of things, then attribute to each option a level of Novice, Beginner, or Advanced, and only show those options applicable to that level.
