Yes it is possible, the setup I have now is E5.5 org in a 2000 domain along with 2 E2k3 on 2 W2k3 servers. Just do the preliminary (upgrade schema-forestprep,domainprep,AD utilities/test, ADC) and install by adding to existing site and you should be on your way. but don't forget your backups.
