Triple-checked...the permisssions themselves for the account in question have not changed...either in the Exchange system, or on the server it's attempting to back up. The thing that changed was that we now have a new server, running a new flavor of Veritas, on a new OS. After I posted that last message, I stopped and thought about it. It may be that I was denied access because there aren't any PF's or mailboxes on that server. So even though the option shows up, it may tell you access denied, because they don't exist.
