Multiple stores requires Exchange Enterprise, which has a vastly increased cost. However, in my opinion, if you want to let users have stupid-large (very technical term right there) sized mailboxes, then you should fork up the cash to be able to put them in their own store, and if that store crashes and cannot be recovered properly, then only they are effected. This also lets you backup their store less frequently, or more frequently, depending on how you want to deal with.
