the ntdsutil solution is ONLY for removing a DC from AD
Right. Sorry, in my pre-caffeinated haste I steered you to the ntdsutil
solution, when I should have referred you to the ADSI Edit metadata cleanup
as laid out in article 833396 in the section titled 'Remove the Exchange
2003 server from Active Directory'
http://support.microsoft.com/kb/833396/en-us
I used this method myself a month ago to remove an Ex03 server that had gone
through all the steps of removing the first server. All the steps except
for the last one: unistalling Exchange. The machine died before I could do
that, leaving a ghostly presence in AD.

you need to remove these servers from AD as exchange was not cleanly
uninstalled.
runadsiedit.msc and remove them from the config NC
