If you've looked at all the features and nothing grabs you, then it's likely that there is no massive rush for you. Exchange 2007 does address a lot of different "pain points". Obviously a lot of the bigger organizations are interested in the new high availability features and the ability to consolidate further, but equally some smaller shops have shown interest in things like the new calendaring features (Calendar Attendant, Scheduling Assistant, Resource Booking Attendant, etc) and transport rules.
