Tony Redmond recommends physical RAM + 125MB. Not that you are wrong. I've also heard it recommended that you set the minimum equal to the maximum page file size to reduce chances for fragmentation.

What else do you have running on this machine? My first thought would be to confirm the page file size. The "standard" page file for NT Server is not enough for Exchange.
