I must recommend the Exchange agent by Symantec, you buy Norton Corporate and get the Exchange agent separate, install this, you get a nice web GUI, and viruses should never land in your users mailboxes ever again.
Very customizable, you can have it mail all people involved, it can set size limits, it can be told not to allow unscanable (encrypted) items, but that is a pain in the arse if its genuine!
