I think the primary differences are not Exchange specific. If the admin is very good in Active Directory, he is WAY ahead.

Administering user settings, e.g. mailbox limits, delivery options, delivery restrictions, etc, are all fairly similar. The main learning curves can come if you're multi-site, where you have different admin groups, routing groups, and associated connectors. But equally, learning new things in a single site can take time, e.g. what the RUS is, creating address lists, how the ADC integrates the two environments, etc. With the right books (http://www.swinc.com/resource/exchange.htm) and a suitable test lab, you could probably survive without a course. On the other hand, Exchange can be fairly unforgiving if a big design mistake is made! And, of course, there's lists like this to help!
