You can use ipsec on the Exchange server to prevent a connection to port 143 from anywhere except where that app is running.

I'm setting up a helpdesk system which requires imap. I know I can enable the virtual server but how can I disable imap for all users except the helpdesk app? Selecting multiple users, doesn't give an option to change that setting. I'd rather not have to set it for each individual user and I'm sure I'd miss disabling while creating new users. Any suggestions appreciated.
