We've done test restores of our databases, and the timings would be roughly 
equivalent to this!

What I'm wondering is how others back up the server itself - OS, Exchange 
Server application, drives etc. to enable fastest recovery of the system; which 
we would then be restoring the database backups onto? We were using an .ovf 
image from a VMware P2V for the server itself, but restoring this does not seem 
to be the most time-effective method.

Take whatever your backup time is, multiply by 2.

That's what restoration is going to take you - assuming you've done it before 
and know what you are doing.

You can possibly shave that down to 1.75 with regular practice.

To make it faster, you are going to have to look at other technologies than 
tape-based backup and restore (or combine them with other technologies).

We are currently using Backup Exec 11d to back up our Exchange 2007 Servers (on 
Windows Server 2003). We are looking at our disaster recovery restore options 
and I'm wondering what everyone else does currently.

We have been using VMware to take a P2V of the live servers and restoring those 
images from tape, then applying the Backup Exec Exchange restores onto them, 
but have run into serious time issues with this practice (it's useful for 
testing/mailbox restores though).

Do you backup the entire server, backup the server image and the databases 
separately? Granular or not? Other options? I'm interested in a worst-case 
scenario where we need to get everything back from tape; assume access to a 
tape drive and blank servers (hardware or virtual) only. We're looking at DR 
sites, SAM replication, SCR etc. separately so wondering what our options are 
in the mean time. Speed of recovery of email service and data is key.

Exchange Server 2007 Service Pack 1
1 x Hub/CAS
2 x Mailbox servers Active/Passive CCR nodes
