Exchange 2010 can do this (see "Transport Rules"), as can various third party 
programs.

We may be looking for software to help automate/standardise email signatures.

Right now the legal text is appended by our edge gateway (as you'll see on this 
message), but actual Outlook signatures are set by each person individually.

What's the best way to put in place a corporate Outlook signature that is still 
unique to the message sender i.e. name/job title/phone number/email is 
automatically populated?

I know there are seldom technical solutions to people problems, but people 
don't do it or forget.
