"K" -> "Panel" -> "Add Application" -> select whatever u want..

I have noticed that in 7.0 I could just right click and say new applicaiton
on the desktop.. but in 7.1, right click shows just "folder".. so all i can
add is folder.

But I found another way to add icons to the desktop..
"k" -> 
"disk navigator" -> "Desktop" -> "Open Folder".

once kfm opens the folder, right click and u'll be able add anything to the
desktop now.

Its a little ugly to add applciations.. when u say new->application, it
pops up a dialog.. which omething like application.kdelink . you have to
make sure that u keep the .kdelink suffix!.. thats rediculous on part of
KDE.. so if ui want xmms, type xmms.kdelink and then the link will show
"xmms".. and then go through the other menus and add the correct executable
and set the icon.
