The single best thing you can easily do to reduce power consumption, IMHO, is to religiously shut off all monitors when not in use (not through DPMS, but through hitting the power switch). The server, especially, should not need a running monitor except in the most extraordinary circumstances; you can do most configuration tasks over ssh, from one of the other machines.
