You have two problems that I can see (apart from a feeling of newbieness
that will go away pretty fast):

The first is that you have got release 0.3.1 which is not quite up to
date. I'd do a "fink selfupdate" one of these days. It's also possible
that you actually do have 0.3.2, but you caught it at an unfortunate
moment where it was calling itself still 0.3.1. But this is not your
most urgent problem.

There should be some subfolders of the /sw folder like /sw/etc, /sw/lib, /sw/bin.
The gimp application is the file /sw/bin/gimp. Additional files are
installed in /sw/share/gimp/ and in some other folders. "dpkg -L gimp"
gives you the complete list of files installed by the gimp package.

Your second problem is that your X11 installation is incomplete. You
need the X server package, "xfree86-rootless" is what you want. The fact
that Fink let you install the gimp without an X server package is most
likely a bug.
