One of the dependencies for Ethereal should have been gtk+, and gtk+ in turn depends on having a copy of x11 available. When asked if you wanted to use system-xfree86 or xfree86-base, what did you use? I'm guessing you went with system-, but didn't actually install it. Do you have a /usr/X11R6 directory? If not, and if you want to run Ethereal and other X11 apps, then you need to download and install X11 first. I believe you can get a very nice version of this from xdarwin.org. Their installer will set you up with a nice double-clickable application to work with. Alternatively, you can go with Oroborosx, which is designed to interface well with Aqua. Get it at julia.et.ic.ac.uk/adrian/software/oroborosx. Or you can download and build it from source with Fink, though that can take a while.
