I've got an iBook 600 and it is much slower at most things than a nice new Linux workstation. But I don't find myself waiting for it all day, just a second here and a second there. No biggie.
However, Fink/XDarwin doesn't seem to be a whole lot worse than native Mac OS X apps. It is leisurely in Aqua as well as in X11. The X11 stuff is typically slower but not unacceptably so. And for what I care about most it is the same.
For example, when I run vim in an "rxvt" window under X and just scroll down in the file (just holding the j key down) it goes just as fast as when I open the same file in BBEdit and scroll down using the arrow key, and is faster (about 25%) than when I do the same operation in Apple's Terminal program.
I don't do any heavy graphics though so YMMV.
