Let's back up a bit first. 
What happens when you start X11? Does a window manager open? You need to
have an environment in which evolution can run. If you start X11 and you
let it start up you need to open an xterm shell (much like a Mac
Terminal shell).Window managers are called from your .xinitrc file. In
an xterm shell you would type evolution. No quotes no start, just the
word, and hit return. Evolution should start.
