a) NO HTML MAIL PLEASE! it's unreadable by more people than you can
imagine. please check your MUA (mail client) preferences and make sure
mail goes out in plain text, not HTML.
b) sniffers:
take your pick .. personally i like ethereal for a GUI version. works on
windows and UN*X. has a great bunch of protocol decodes.

i also use 'dsniff' a lot on UN*X to analyze a lot of networks. it comes
with a very nice set of tools for network monitoring.
