Yes, this is indeed possible and you will not need the server with Flex 2. However, just a heads up, the webservice stuff is pretty slow (and has a lot of odd behaviors right now in the beta) and I've started to migrate from using WebService to using HTTPService with a REST backend developed using HttpHandlers.
