One way of doing this is to have start and end time fields, add a button to them to enter the current time. Then have a third field to calculate the difference. Create a new record for each activity.
If your time periods run over days then you need to track the date as well (in more recent versions (8+?) you can use a timestamp field that combines date and time in a single field, making calculating the difference easier.
