John,
I had a similar problem: I followed the directions and uninstalled Server 8; 
then fms10 told me it was still installed.
Reinstalled server 8, then uninstalled it, then installed server 10 - success.

Haven't checked lately, but usually installation-related tech support is free 
from FileMaker.
