I don't run OpenSSH, so I can't comment there...

In the sendmail.mc file: 

define(`confSMTP_LOGIN_MSG', `$j $b')dnl 

will get rid of the version reporting portion of the banner. 

Further, to be complete, delete your /etc/mail/helpfile and replace it
with the following two lines 

#vers   2 
smtp    No help file is available.
