I agree that a VPN connection back to your friend's home or work is an easy way to ensure the security of her network traffic. Unfortunately most VPNs (not sure about OpenVPN) are dependent on properly configured routers which you may or may not find in the typically coffee shop. One tool she might want to check out: http://www.hamachi.cc/, not only is this a free and secure tool but it supposedly has excellent NAT traversal abilities.

A VPN would be a great addition (I'd recommend OpenVPN). She could look
into hard disk encryption to, if she has any sensitive data on there.
