I haven't tried print stock, but have played with film I made myself (handmade emulsion applied to clear leader) and that is also rated at a 5 (if that). I would still absolutely take light readings, especially if you're pointing at the light source, you might be surprised how much light it throws off. Maybe try spot metering instead of ambient. I find that helps me "see" the scene the way the film might. Post your results! I'd love to see them.
