To me it boils down in how far we just have to write up a package description, upload a logo and we are done.
Once an application draws more maintenance effort from our side we should instantly shy away from behemoths like Gitlab. It does not fit our target audience and only puts in more weight. Lets care about utterly basic things like having reliable, easy backup security and easy reachability from the internet. Wrapping up any arbitrary debian package and making it show up in plinth *can* be done after that, though.
