Fussing with a SCSI to FireWire converter isn't worth doing considering the old scanner and potential troubleshooting issues your mom will have to deal with. FireWire scanners are rather pricey. I suspect your mother doesn't need to do fast, professional scans so you might want to consider a nice, inexpensive USB scanner (Click on the scanner link on the left side of the window when you get there).
