I haven't a clue as to why you would think this was off-topic.

Nevertheless, I understand your braincramp because you used to be able to do this all back 15 years ago with system software---why not now? The answer is you can--just not with iTunes. There are many, many, many inexpensive programs out there-- but you have to say what you want the capture for. Also do you want OS-9 or X? Do you want pop filters for vinyl? In addition to amadeus, there's protools, peak (etc), sound studio (griffin), Spark, audacity, AudioX and some others. There are some threads on the G-List on this topic.
