Congrats on the upgrade! You'll notice a nice performance boost.

From my perspective, you'll get a nice boost by upgrading the RAM (pulling the 128MB module and replacing it with a 512MB). You have a full year to get AppleCare, so unless you need the phone support (which is initially only 90 days), you have some time. You can elect it anytime during the first year warranty and it will add 2 years to the total time. It also extends the phone support from 90 days to the full 3 years. In the end, I recommend it "just in case". You can often find ithe enrollment kits discounted online as well. I got mine (iBook-specific) for around $125 on one of the boards.

I'm a big fan of Airport, and highly recommend it. The Apple card isn't too expensive (and you can usually catch one on eBay). I really like the base stations as well, but if you don't need the external modem and antenna jacks, you might be able to get by with the new Airport Express. It' looks really slick and is a bit cheaper.

I have one each of the Airport Extreme base stations (with and without the external antenna jack) and they work great. I use one as a repeater to completely cover my house for wireless.
