I read this as "2x256" vs "1x512" but maybe I was wrong.

Having 512 is much better than 256 and I can't imagine any downside.

Having to buy two DIMMS to upgrade past 1GB.

That's the reason I'd go for 1x512 over 2x256 any day, and definitely 512 over 256. 256 isn't really sufficient for OS X.
