Graphic Converter is good, as is iPhoto. Both will come with the G5. iPhoto is more of a cataloging app, though the latest version includes considerably more editing chops.



Also, what is a good manual for the idiot class (me) to get OSX feet wet.

OS X:the Missing Manual is a good and hefty tome for this purpose, but if you're getting a new mac, you'll want to wait for the 10.4 edition.
