Thanks for all the feedback. Understanding what is behind the filtering process helps to effectively take advantage of the process.

Now for the practical questions. Where is the spam database kept?

I don't know, probably somewhere in your ~/Library directory

Do you need to clear it if it gets poisoned?

Well, we're not entirely sure that the poisoning stuff works. So far I'm getting some of those kinds of messages through my Junk filter, but marking them as Junk has not, as yet caused a rise in the number of false positives. To reset the Junk filter in Mail.app , go into Preferences > Junk Mail and click on the "Reset" button.

If you wish to see the details of Mail.app's filtering (which isn't entirely based on the junk filtering) click on the 'Advanced button in that preference pane.

Is it self cleaning?

No it isn't.

Do I need to be careful what I designate as spam (I may poison my database).

Probably not. Carefully marking the false positives as Not Junk will fix it.

Are these questions unknowable because if the spammers knew this they would know better how to defeat spam filters?

Well, this is largely terra incognita for everyone; it's an arms race; spammers versus the human race.
