Have you checked the memory one by one? =>One or more of the sticks can 
be bad.
Have you tried the old processor again?
Is 450MHz the default speed or is it overclocked? =>The new CPU is 
faulty or runs too fast. Try underclocking (see 
http://www.xlr8yourmac.com/G3-ZONE/yosemite/OC.html).
Are you running the 80GB from the mobo or a seperate controller? Some 
B&W's REV.1s have problems with bigger HD's than the stock 6GB. =>Buy a 
PCI IDE controller card.
Also a collegue of mine has exact the same pause every 30 secs with his 
B&W G3 300 at home, in OS 10.2.8, 9.2.2, and also 10.3.x. He can't find 
a solution. So if you find a solution please let me know.
