It partly depends on what sort of "touch" you are looking for. I prefer a keyboard with some resistance, i. e. not "mushy." I liked the Apple Extended Keyboard but didn't want to buy a USB-ADB adapter when I no longer had an ADB port.

If you don't want to go the ADB route...
For a long time I was using the MacAlly iKey which has a pretty resistant "chunky" feel. Then I got a deal on the Matias TactilePro which claims to use the same mechanism as the Apple Extended Keyboard. The touch is a bit lighter than the MacAlly iKey and the action seems somewhat smoother, so that is the one I am now using.
