You'll need to get a Radeon PCI card for the dedicated video PCI slot, and then run Tiger 10.4.11 with PCI Extreme 3.1 to enable Quartz Extreme. You can do a soft RAID of two striped HDs to quicken up the HD access, you can setup the RAID in Disk Utility if you have a matched pair of HDs.
If you replace the G3 CPU with a G4 CPU you can run Leopard 10.5.8 if you use Leopard Assist or some other method to install Leopard.
