Edmund, There are a number of people here who have done that and gave presentations on it in previous BRLUG meetings. I use OpenBSD instead of Linux for my firewall so I can't really help you with setting up a Linux box to do this.
I believe Ricky Salmon has provided some notes to the www.brlug.net site on a presentation he did about Linux firewalls. Anybody have the URL? Do you have more specific questions? That might help us help you.
