It really is a personal decision as to whether or not it is stable enough. Personally, I have 8 servers including 2 firewalls running Gentoo without a problem. (and 1 i-Opener just for fun)
Personally, I hope they don't do anything more than the ~* to differentiate testing from production. If I wanted a 'stable' release vs. a non-stable release, I'd use Debian.
