First, -all desktop settings, a short example should be:
"-X -gnome -gtk -gtk2 -kde -qt"

For security (I recommend read about the Gentoo Security Proyect):
"pam ssl tcpd"

Then, for webserving, you have to choise between apache or apache2 use
flag.

Other importants are "maildir -mbox imap (for php) gd (for php)
imagemagick".
