Ubuntu. Heard some good things about it, so I thought I would give it a try. Guess I'll have to wait a few months for the next major release comes out to see if it will actually work for me. :) The trouble was the installer loading the 'sd_mod' module, which locked the installer up.
As an update to my original post too -- I think I "solved" the GCC problem. I added ACCEPT_KEYWORD="~x86" (which I was using in my past install as well) and I am no compiling gcc-3.4.3 w/o any trouble (knock on wood).
I'm still scratching my head over why my "[ ok ]"s aren't showing up at boot though.
