Hi, make sure you have XFS compiled into the kernel ( not as module), or include it into the initramfs ( dunno how you would do that with genkernel though, I don't use an initramfs ). Grub should include a line saying root=xxx, maybe you have to set rootfstype, had to do that for BTRFS. Also make sure that you have sata ( or nvme if you use that ) compiled into your kernel.
