disclaimer 1, I work for another company that does sell services
around geoserver, which is geosolutions.
disclaimer 2, I have never played with the suite myself.

If you need GeoServer and Postgis you can get them separately and
install them as you wish, at least
this is what we do for our clients anyway.

Other than that I think you can get better answers on the suite forum,
since obviously answers on this list could be biased anyway, one way
or the other :)
