Hi there,
Check out the ImageMosaic plugin
http://docs.geoserver.org/latest/en/user/tutorials/image_mosaic_plugin/imagemosaic.html.
No need to create one single GeoTIFF beforehand as GeoServer will compute a
sheet index itself (as an ESRI Shape file).
