reprocessing to 8bit - no way (other app is using this rasters and thats
way they have to be 1bit)

I tried to add overview to that one sample raster and add it to new
datastore in Geoserver and preview in WMS - quality is still poor.

but wat do you mean saying "you may want to try and ask the imagemosaic to
expand the palette to RGB" ?
