I would very much like to know myself too, but I really have no idea on
how to gather this kind of information. Most of the time people do use
open source products without telling anybody outside their organisation,
it's pretty common here in Italy at least "yeah, we're using linux, but 
don't tell anybody please".
I know of a couple of big geotools/geoserver users that do use them in
internal projects, but required not to tell the world about it...
