Hi Justin; I am releasing uDig 1.2.1 right now; thus far GeoTools 2.7-M4 is 
working okay for me ... but if we make a GeoTools 2.7-M4 release today we can 
both test and use it.

Why 2.7-M4?
- we are stuck in the milestone phase until imageio-ext is ready
- There is some api change incoming from the xpath discussion
