I don't mean to drive you towards Maven, although most of us surrender
in the end :)

I'm afraid that I can't guide you through the installation because I
use OSX where JAI is pre-installed. However, a couple of points...

GeoTools has used JAI for a very long time, so switching to 2.7 RC2
shouldn't have made any difference. Have you just started using
GridCoverage2D perhaps ?

If you do go back to using Maven you shouldn't need to add anything to
your project pom because the JAI repositories are in the GeoTools pom.
