Hello,
         There might be way around this if you have Udig installed (you
mentioned you had downloaded Udig in an earlier message). If I look in the
following path on my computer -

 C:\Program Files (x86)\uDig\1.1.1\eclipse\jre\lib\ext

I have the following jai files there

jai_imageio.jar
mlibwrapper_jia.jar
jai_codec.jar
jai_core.jar

add these into your java build path as external JARs ----
 (in eclipse -> right click on the offending project ->properties -> java
build path tab.

However, Maven is the best solution in the long run with a project like
Geotools which has so many dependencies it makes my head spin...
