Most important thing to know about gerbils, is that they are social
animals, who really need a mate! A single gerbil will be very lonely,
insecure and might even get sick from loneliness, and won't be as tame as
when you get two or more gerbils.

Yes, they might, especially young gerbils are very quick, and they just
won't sit still, they just want to explore you, and the world! I think, for
very young children, gerbils are not suitable to hold. Than you better get
them a guinea pig or a bunny. But to watch, gerbils are great! And if the
children are a little bit older, or very handy, they can surely play with
the gerbils, preferably leaving the gerbils in their tank, and let the
children put their hands in it, and play like that.
