Mine always seem to drop a lot when they are excited, for example, when I
let them run on a bed or on the couch & they don't seem stressed.
They also go a lot in their balls (pee too) even though they love to tear
around in them. We have bare wood floors & they all zoom around, each in
their own ball. If the gerb does not seem frightened by the ball, try
turning them loose somewhere without carpeting so they can go fast. It's
taken some of ours a few times out to get into it, but they all love it in
the end.
BTW all of our gerbs have loved running in balls & none have ever liked a
wheel (just use it for a bathroom). They walk or run a little in the wheel
and sniff. When it still smells the same they give up quickly. Perhaps if
they didn't get to run in balls the wheel would be more attractive...

I think the amount of poopies they do is related to their level of stress.
Gerbils on the whole do not like the exercise balls. I know mine absolutely
abhors them. They'd do anything to stay out of them, including hanging on
for dear life to a pot inverted over the ball to make them drop into it!
And when they do get tricked into them, my gerbils produce an excessive
amount of poopies. I'd suggest you stop putting them into the balls if they
continue to do so.
As for pooping on you ... maybe they're not comfortable enough with you yet?
