why do we need these hacks? can we drop the jwt var completely?
I think we should replace `ICEBERG_CATALOG_SERVLET_AUTH` &
`PROPERTIES_SERVLET_AUTH`
with
`METASTORE_REST_CATALOG_AUTHENTICATION("metastore.rest-catalog.authentication"`
